The history of Tequila

Centuries ago, the Aztecs tribes living in the Mexico were prepared a drink named Pulique , by
fermenting the Agave plant and they
drank this light drink in their religious ceremonies, and devoted themselves to
the great Mayan god Olmeca.
At the beginning of the 1600's. for the spanish who came to the region with
geographical discoveries, this mild drink could not meet the hard drink needs
and they distilated Pulique for having a hard drink. as a result tequila came out
It's took his name from the tequila town of Jalisco, Mexico.
Tequila town's most important feature is the having best climate and soil conditions for groving
Ageve plant. And Tequila is only made in this part of the world.
How to Made Tequila?
For centuri
es workers called “Himadore” have grove amd
harvest to the blue agave plant for tequila. This palnt’s maturation time takes
approximately seven years, even today harvesting made by hand by Himadores.

Himadores prune off the gren leaves untill all thats left
and remains the huge core , called “Pina”. Pina looks like a giant pineapple.
After harvesting and pruning pinas sended to the Distillery
. First of all workers divide pinas into quarter pieces . That is more
manageable size for baking. And than they transferred to cohopped pinas to big
brick owen . Pinas slowly baked for seventynine hours in here, this process
convert the agave starch to sugar. Also in this process the pinas softened and the clolors turned to
Brown .
After baking pinas sent to shredder and rotates to long thin
fibers. Shredded pinas land in apit and squeezzed by big stone Wheel, called as a “Tahona”. It takes
two hours of crushing to extract all the agave juices.
After this process juicing mash transfereed to wooden tanks
for fermentation . In fermentation process mashes sugar transform into alcohol.
After seventytwo hours of fermentation the alcohol content reaches %5. Farter
the fermented mash transferred to small copper tanks for distillation , after
two times distillation cycles they have alcohol content %55 Tequila.
After all those process Tequila transferred to steel tanks
for extinguishing. They add pure water for alcohol content biringed down to
%40.
Tequila is now ready to be classified according to its genus
and quality.
• Reposado: rested
from two months to one year
• Anejo: rested for more than a year.
• Blanco: Colorless, waited in metal or glass tanks.
• Gold: composed of Blanco and Anejo blend
• Extra Anejo: rested for at least three years.

How to drink Tequila ?
The most common method of drinking tequila with lemon and
salt I do not need to tell you this,
but what if you went to a bar in Mexico and ordered tequila? Here you are
confronted with a variety of different forms of drink according to your desire.
Tequila Sangrita : When you order the sangrita, you will get
two shoot glasses, one of them your Tequila of course, and the other will be
sangrita whichs prepaired by salted
tomato juice, lime juice, tobasco sauce and spices. You can enjoy your sips
Tequila Sol de Gusano : If
you believe the worm's legend, you can
order a "Sol de Gusano" . Your Tequila will be served with lime
slices and Sol de Gusano . So what is
Sol de Gusano? . It is a kind of worm which is thrown into the Mezcal bottles ,
they roasted with chili pepper and spices. and after made into powder, Sprinkled
on a lime or orange slices for served with Tequila
